We do burger night every other week or so. Every couple of months I’ll hit the store, see what’s on sale, and come up with a blend to grind at home targeting about 75/25, then I freeze patties for future burger nights.

Today’s grind: chuck, top round, and a strip plus rib meat trimmings I had in the freezer from breaking down a big standing rib roast. I also had some beef fat on hand leftover from making tallow, so I threw a few oz in for good measure.

Smashed those fuckers on a hot ass griddle. Salt and pepper. Melted Coopers sharp and served on toasted brioche buns with some burger sauce and pickles. This particular blend was on point, I’m getting better and estimating the fat content and something hovering 75/25 makes for a great smash burger. Huge umami beef bombs to the gut. We’re all slightly immobilized. We only eat beef 5-6 times a month, so burger night is always a banger at the Scooter household.

Smoked some ott chili and had some extra ground beef and charcoal left to reverse sear a thick patty.

What do we think of this sukiyaki inspired burger?

Double meat,double white American cheese, grilled onions, crispy shallots, green onions served with a Dashi jus on the side.

Pretty basic burger, but I enjoy them that way.

Hi! First time posting here! I fucking LOVE burgers! I am American after all. I’m not that great at taking good pics so it may not look as appetizing as it smells or tastes but omfg it was so juicy and good!! I burnt the hell out of the potato wedges as my air fryer broke and I had to get used to baking them and the recipe said to bake them for 40 min at 450 after parboiling them (parboiling and tossing is the GOATED method for crispy potatoes) but over did it down! 😔HOWEVER, the insides are still light and fluffy and the bacon fat makes it all okay🥰

Details:

Basics: 4 smashed patties, 80/20 beef seasoned with salt, pepper, garlic powder, and paprika, Buttered buns, provolone cheese

Burger Toppings: Bacon, Avacado, Pickles (on one or them), bacon mayo, ketchup, onion

Baked fries: salt, pepper, garlic powder, paprika, oregano, bacon fat/grease (topping at the end), honey mustard (to dip)

Habit burger. Perfectly cooked with a little pink on the inside.

Sourdough buns made with soft wheat flour (10% protein), sourdoigh starter, full-fat milk (3,6% fat), cream (36% fat), water, eggs, sugar and salt.

Inside we have roasted speck, two beef quarterpounders roasted in speck grease, melted brie and melted cheddar, estragon mustard, cornichon sliced lemgthwise, salt and black pepper.
