Carbonara with more cheese this time. Very al dente fettuccine just how I like it.
Hello it's me larping fakecel chadcel again. But I am still a khhv chud.
A commenter called this place the only zoo exhibit that the animals voluntarily participate in. That's a good description. The fruitful discussions we have in this sub are great reads and a good way to pass the time. There are some funny mfs in this place. But the terrible advice, hypocrisy and lack of reading comprehension and strawmans knows no bounds. From both sides. But normies, understand that It's hard not to be bitter when your life is shit and theirs isn't.
No one I know in real life is as terminally online as I am so this is really the only place to talk about this stuff. And since it's online and not real life, my social anxiety and autism are also not as detectable so I can actually talk to people. I'm glad that this sub is just weird enough that it also repels bots and AIs. Who the fuck would waste time making a bot farm for this sub.
Also, can I just say what a great call it was from the mods to not create a discord for this sub. What a clusterfuck that would be.
That's all for this post. Good cooking and eating to you all and see you soon.
EDIT:
Recipe
Serves 4-6
It's verbose but very fast and simple. Takes 30-40 minutes if you do some steps at the same time, like boiling the water and browning the bacon. Based on the NYT carbonara recipe. You can skip the toasting the peppercorns if u want it's just something fussy I do since there are so few ingredients and steps. Also make sure the parmesan is high quality and flavorful, you can even replace some parm with pecorino romano if you have.
Ingredients:
500 grams fettucine
3 strips thick cut bacon (if you can get guanciale better)
3 egg yolks (separate this beforehand)
3 whole eggs
200g parmesan grated (prepare this first)
More parmesan set aside for topping
3 tbsp whole black peppercorn
1 cup pasta cooking water (get this later)
Toast whole peppercorns on stainless steel pan on medium until fragrant. Once fragrant, grind in mortar and pestle and set aside.
Put 3 egg yolks and 3 whole eggs in medium glass bowl with parmesan, add 2/3rds of the ground black pepper and whisk.
Chop bacon to bite sized strips then place in cold pan and start frying. Fry until browned but not crispy.
Start boiling water and add salt. Cook the pasta a minute or two under package instructions for al dente. Test to make sure.
Save 1 cup of the boiling starchy pasta cooking water before draining pasta. Put the pasta back in the hot pot if you drained it in a collander.
While stirring vigorously, slowly drizzle the pasta cooking water into the bowl with parmesan and egg mixture. This tempers the egg it so it doesn't scramble. You only need to put a few tbsp not the whole cup. Only until the texture loosens a little.
Pour the mixture over the cooked pasta in the pot and toss and mix vigorously until the sauce turns creamy. If it clumps, drizzle a little more pasta cooking water. Just make sure it doesnt scramble the egg.
Toss the bacon in and mix
Portion and serve. Top with more grated parmesan and the saved ground black pepper.
