DrScrimble's Guide to playing a Chinese PC as someone with 34 years experience being Chinese:
Create a character concept you like. Think about their demeanor, their skills, their aspirations, their fears, their quirks.
Once you have that, additionally add that they are Chinese.
Congratulations, you've made a Good Chinese PC.
"What if I don't know anything about Chinese culture?"
That is fine and normal. Your PC doesn't have to either. No one's ethnicity *inherently* connects them to their ancestral culture. I have many PoC friends and family members who are culturally indistinguishable from "average" Americans.
"I don't want to come off as charaicature."
If you're devoted to roleplaying a character it's honestly hard to do that. If you want your PC to be a space pilot, have a pet tarantuala, and be deathly afraid of caves, then that's all compelling regardless of their ethnicity or gender.
If you make an honest mistake, say "damn I didn't know, sorry guys, thanks for informing me" and move on. If your table can't handle that graciously, that's a red flag for table culture.
