both the chicken apple sausage and polenta are pre-cooked. I sliced the sausage, but that was optional. so are the shallots. it was my first time trying polenta! I heated it up with milk, butter, onion and garlic powder, and a lil mozzarella. deeeelish and a super easy brunch :)

I added fresh parsley for a lil razzle. I always feel fancy when I use parsley lol.

do you like polenta??

Also, I was just cat sitting for my grandma, when she asked what foods I wanted to add to the grocery list I added “one fun shaped noodle”. That is when I learned about race car wheel noodles :D

Hormel Compleats

I got some of these Hormel dinners from the soup aisle, and they taste just okay, but are super easy. They don’t need to be kept cold, they microwave in one minute… So far, I’ve tried the mac and cheese and the chicken breast with mashed potatoes and gravy. The mashed potatoes had a weird texture, but okay flavor.

We don’t have a ton of room in our freezer, and frozen meals can sometimes take a while to cook, or have complicated instructions. So I like these meals on times when I need to eat, but don’t want another bowl of cereal or to cook something…

Chickpea one pot meal, zero effort

Hey everyone. I just had to share because this tasted way better than it had any business tasting lol

I was starving and didn't have much food, so I looked around and found a can of chickpeas, a tiny bit of frozen rice, 3 corn tortillas, some fresh fire-roasted salsa, and nutritional yeast.

I broke the tortillas into quarters, rinsed the chickpeas and put everything into a small pot (about 2 tablespoons of nutritional yeast and maybe like half a cup of salsa), and heated it all up until everything was warm and starting to stick a little to the bottom.

I don't know why, but it was so good. The tortillas got really soft and it had a lot of flavor! It was also just really comforting. I ate the entire thing!

I think it would be just as good without the rice. Next time I might try it without rice, and also considering trying with pinto beans instead of the chickpeas, and maybe some guac on top.

wanted to share because it was so easy and surprisingly delicious 😀

Introduction…

Hi. New to this sub and wanted to introduce myself and my situation… possibly get some advice?!? Here it goes:

I’m physically disabled (CRPS) and have lived with my parents since the onset back in 2015.

I cannot cook, as I have limited function of my hands due to the disability. My parents have to cut everything into bite-size pieces for me.

Mom has borderline personality disorder.

Dad was recently diagnosed with Alzheimer’s. He was my caregiver, now I’m his.

I have attempted on NUMEROUS occasions over the past few years to adapt to different types of diets (WW, Noom, Dietician, FodMap, the list goes on). Since my mom is the primary cook (no one is allowed in her kitchen) she’s hops on the bandwagon for a few weeks, then she starts in with her cravings and next thing I know she’s making changes to the recipes I plan. Plus, she’s getting older and cooking is very difficult for her. So, I lean heavily on heat and eat prepared foods from Hy-Vee (our local grocery store).

My doctors have encouraged the Mediterranean Diet to help me with my inflammation and since his diagnosis my dad’s doctors are encouraging it to help with his heart and brain health.

Challenge is how to make our meals practically cook/preparation-free without the added expenses of a personal chef and/or mail order. As I’m assuming most of you can relate, we are on fixed benefits so not a lot of wiggle room on where we can get our foods without causing a financial deficit.

Am I just screwed?!?

Thanks for reading to the end and hope you have a blessed and joyful day.

Mushroom, white bean, & gnocchi in marinara w/ mozzarella (recipe included)

I had a little bit of energy for cooking tonight, and I found this recipe online that I’ve been wanting to try. We’re reducing our meat consumption significantly so I’m on the hunt for new recipes. We both have the ‘tism and are picky about flavors and textures, + chronic pain & work so it’s hard to feed ourselves sometimes but we both really liked this tonight!

The recipe is in the second pic but I free-balled a bit: I reduced the beans to 1 can instead of 2, substituting a pack of gnocchi I had sitting in the pantry. Frozen garlic bread because easy.

New favorite work lunch

Baked sweet potato, cottage cheese, and a protein/fiber shake.

On Sunday morning, I pick up groceries and the immediately bake my potatoes. After they’re cool, I divide them up for the week. I eat them plain, and surprisingly don’t feel like they “need” anything extra. Sure, butter or something might be nice…but that’s extra work.

One 4oz serving of cottage cheese (low fat because I’m also trying to lose some weight).

Then I have a fruity flavored protein powder I mix with water in blender bottle and add some fiber powder to it.

The Sunday morning prep works for me because mornings are when I’m at peak performance.

I share this because I hate going online to find “easy” lunch ideas that have 35 ingredients and 17 steps. That’s not “easy,” sir.

My go-to chicken salad:)

This is a fairly simple meal I like to make:) Shredded rotisserie chicken, a can of chickpeas, chopped cucumber, and whatever dressing you like! I prefer a creamy dressing. I used Tuscan garden - Parmesan ranch. Regular ranch is good too!

I’m having a crispy coke with it too:)

rice cooker meals?

my favorite recipe is chicken and mushrooms in the rice cooker. does anyone have recs for more meat and veg (plus rice) in a rice cooker recipes? I'm fine with stuff that involves measuring spices and chopping some amount of veggies, but nothing that requires pre cooking please

(it's miso claypot chicken no clay pot from the lucky peach cookbook. the rest of the cookbook is not low spoons friendly, but if your library has a copy it's worth it to take a picture of this page. I do it with brown rice and a whole 8oz thing of chopped mushrooms. brown rice means you don't have to cut the chicken, so the only cutting is the green onions)

I've never cooked because I'm constantly terrified of starting a fire, poisoning myself, or contamination. Has anyone gotten past this?

This is very embarrassing but I never cooked or helped cook growing up and when I moved out on my own I was too scared to try. I knew I'd fuck it up, I knew I'd give myself food poisoning, I knew I'd cause a fire, I knew I'd get mice. I'm terrified of it and avoided it to the point I never even think of it as an option. All I do is buy pre-made, or TV dinners, or take out. It's getting insanely expensive and I'm starting to gain weight and I need to cook for myself but I feel so pathetic something as simple as cooking is unfathomable to me.

Has anyone gotten past this? I genuinely can't stop thinking about mice getting into food left in a pantry or accidentally eating undercooked food, I'm not sure how I can even start.

quick scrambled egg tacos

doesn’t look the best but does fill me up. you can do so many different variations but I have corn tortillas and sliced red onion on hand I need to use up and very little energy this morning.

so I just quickly scrambled some eggs, wiped the pan and warmed the tortillas in the same skillet, broke up some pieces of red onion (refused to get a knife out), and added hot salsa. would have added mashed avocado too if I had one.

cilantro, shredded cheese, leftover bacon or sausage or something would also be a great addition

My better-than-nothing Noodles

Post image
457 Upvotes

This is something that I do often and is especially comforting to me.

Basically it's: Random Instant Noodles (usually the cheapest ones) + whatever veggies I have in the freezer -> add boiling water and then 2 to 4 minutes in the microwave.

You can add the noodles before or after. I like mine super soft so I put them in before.

Today is:

- Edamame (bought de-shelled and frozen)

- Brocoli (frozen)

- Baby Corn (bought fresh today but put away in the freezer)

If some of you want to add meat, I recommend the thinly sliced meat sold in Asian grocery stores. They're meant to cook in broth, so they only take about 2min to be done in the microwave.

I started doing this thanks to Kylie Sakaida. I'd say her philosophy is "Eating healthier isn't just starting over and cooking from scratch. Sometimes, it's just adding new things to what you're already eating. It's better than nothing."

Quick and easy dessert for the week

Post image

Black bean brownies had been coming up on my reels a lot and I like the idea since my doctor wants me to up my protein and fibre.

But I didn't want all the muck around of making a recipe from scratch. I googled and found one where you just use a box mix and you blend up a can of black beans with a cup of water, mix it together, and then bake. It was so quick and easy and it tastes so yum.

5 stars from a silken tofu skeptic

Silken tofu straight from the package, topped with soy sauce, sesame oil, chili crisp, and green onion. Served on rice.

I've wanted to try this for ages because I love chili crisp, but I had bad experiences with silken tofu growing up (almond mom making vegan puddings and such, you know the deal). I love crispy fried tofu, and crispy baked tofu, but they're so much work to make.

This was so easy and so delicious. It has the texture of a really luxurious, creamy scrambled egg. Not at all the slimey chalky slug I remembered from childhood. If you too have been on the fence about silken tofu, give this a try.

Parmesan Garlic Red Potatoes & Green Beans with Air Fryer Shrimp

These frozen veggie sides from Birds Eye are saving my life right now. They have a bunch of different kinds. I quick-thawed the shrimp in a bowl of tepid water for 2-3 minutes, then dried with a paper towel and tossed them back into the same bowl with S&P, extra virgin olive oil, garlic and onion powders, and Greek oregano. Into the air fryer on a parchment liner (6 minutes at 380°F). Put the veggies in the microwave (also 6 minutes), and it all finished together. Unloaded the dishwasher while I waited.

Cornbread

Anytime I put leftover cornbread in the freezer, I think about when I was a kid and my dad would crumble up leftover cornbread in a glass of milk with a little sugar and eat it with a spoon. Cornbread never made it to the freezer back then.
