I love egg bites!!!
Super easy and delicious meal prep! I make them à la Starbucks style with a water bath (not technically sous vide like them) and cornstarch :)

My new obsession! 😍
I tried a sandwich like this at Marks & Spencer, and now I make it myself.
Toasted bread topped with boiled eggs, mayonnaise, tomato and garlic.
Soooo delicious and refreshing!

Any suggestions?
About to bake some sweet potatoes, what are your favorite toppings/ways to eat them? Can you tell that I love sweet potatoes?
Plan to make some banana and pumpkin granola too, let’s see what happens

Anyone else find that eating clean gets harder when you’re home all day?
I work from home with the kids around and somehow lunch is always the meal I screw up. I’ll make them eggs, fruit, whatever, then realize it’s 2pm and I’ve eaten half a banana and three bites of leftover mac and cheese.
Started keeping cooked rice, chopped veggies, and some kind of protein in the fridge so I can throw a bowl together in five minutes. It’s helping, but by Thursday I’m usually sick of eating the same thing.
Trying to eat less processed food without turning meal prep into another part-time job.
What are your go-to lunches that take almost no effort and don’t leave you with a fridge full of stuff going bad?
