Pork Matsutake Gohan!
I went foraging and found the mushrooms I was looking for, for more than a month!
Added a quarter teaspoon of cinnamon and
I fried up some ginger teriyaki pork to toss in as well.
I didn’t care much for the plating so the photos look like slop but the flavours were extraordinary😋

I was craving a fish taco and decided to make one for myself
Was absolutely ravenous by the time I got done with everything and made this in record time. Please ignore the half torn tortilla.

Lemon Butter Swai paired with mango Makgeolli
Tonight, I made Lemon Butter Swai and paired it with a refreshing mango Makgeolli (Korean rice wine). I only learned to make this dish a few weeks ago and I was hooked by its combination of smoked paprika, lemony sourness, buttery, and fried garlic flavors. I have gotten better in making it repeatedly. I added flour to the recipe so that the fish became crispy when it was pan-fried.

Home made slow roasted chicken, mashed potatoes, carrots & celery with a lemon thyme dressing
Separated a whole chicken, tossed the 2 bone-in breasts & quarters in olive oil, juice 1/2 lemon, ground thyme, salt, pepper, onion powder, garlic powder and 1/4 cup-ish of melted butter in a bowl and coat chicken completely, lay on a bed of chopped carrot, onion, lemon chunks and celery in a oven/stovetop proof pan (something like a shallow Dutch oven) and put 1cup if chicken stock in with the veggies.
400° oven covered for around 40 minutes+20 more mins with cover off
Remove chicken to let rest then use Dutch oven on stove to make gravy from the base mixture of veggies and chicken drippings and use a cornstarch+water slurry to thicken gravy as per your desired consistency.
Enjoy
EDIT: the title is supposed to be lemon & thyme gravy. Not dressing. Lol

Made myself a cheese filled omelet
Two farm eggs, salt, pepper, dried onion flakes, and dill whisked in a small bowl, fried on small pan mid way on medium heat, filled with freshly shredded old cheddar, folded, flipped, heat turned off, let residual heat cook while pressing until done.
