Plate Hainanese Pork Chops (boneless loin tenderized, marinated, coated in cream crackers) is usually served w a tomato based sauce but my hubby prefers having it with Curry Vegetables with homemade curry paste. I agree it's perfect! We wiped out our dinner, down to the last drop of curry.

Plate Proper home made roast chicken dinner …. No, it’s not carved as it just fell apart!

Everything made from scratch, even proper gravy!
If a jobs worth doing, it’s worth doing properly. I then found the stuffing in the oven once we’d finished. Mum enjoyed it all and that’s the main thing 😋 - obviously with a lovely bottle of NZ Sauvignon!! I usually treat her out to lunch but way more personal and quality time together. Cherishing family is very important if you’re lucky enough to have them back.

I love Korean-style pancakes (usually very large), so I decided to create my own mini version using the ingredients I already had in my fridge.

They were so much fun to make, and even more delicious to eat!

Plate First ever attempt at making Party Jollof

So yeah, I made Jollof for the first time ever. My friends absolutely loved it. This was about 2 months ago.

What makes it a party Jollof Rice is that inside the rice I packed it with bits of prok so that you get random bites of goodness although you can’t see it in the picture.

On the side you can see some grilled Chicken which was grilled tenderly (meat was falling off the bone)

Some plantain for plot armour and tomatoes for decor

And lastly beef patties for the extra fun.

For the adults there is a bottle of “Triomphe Rose” and for the kids a glass of black current diluted juice.

I started cooking more because I was fairly recently diagnosed with depression and anxiety and I watched a video where the guy said the thing that helped him the most wasn’t the meds but the change in lifestyle. At this point I hadn’t consistently cooked in around 2 years, in which I had probably actually cooked 4-8 meals. I was surviving off free work meals and Morrison meal deals.
I decided I’d pick up the pan and do one of the things I hate the most with the intent of finding the beauty in it… and that was cooking.
Really, it helped so much. I now cook at a MUCH more consistent basis, I’m saving about £25 per week from not buying meal deals, I’m speaking to the chefs about what and how they cook (I work in catering) and have a little new bestie who is an absolute unit in the kitchen. It really is funny how things turned out.

P.S. i’d still never be a chef so please don’t bother asking me to go down that route :)
