Ordered these strip steaks from my local butcher shop, should I ask for a refund?

I’ve spent probably thousands of dollars supporting this local shop, today I ordered from them instead of going in person and got these three monstrosities that they are calling strip steaks. The fat caps are massive and the butchery seems very poor. What do folks think? Am I wrong? Should I return these?

My butcher is concerned about selling a half cow to us. These are Strips from the half. Can someone explain why from this photo?

Need some advice on training a new meat cutter, shes 19 and will to learn.

I’ve only been a manager for a little over a year, maybe two, and I’ve had this clerk on my team for about six months. Honestly, she’s the first woman I’ve worked with in the meat department, and she’s probably my best worker outside of my assistant and my other cutters.
Unfortunately, one of my cutters is leaving at the end of the year, and I’m not able to hire anyone new to replace them. That means I need to train someone from my current staff to fill the position. She’s willing to learn, and I think she has the work ethic for it.
My question is, am I overthinking this and unintentionally treating her differently because she isn’t as physically built as the men I’ve trained? Am I being reasonable by adjusting how I approach her training, or am I making assumptions about what she can handle based on her size and the fact that she’s a woman? I want to train her properly and give her a fair shot without setting her up to fail or holding her back because of my own assumptions.

Need advice on asking what to get back from abattoir UK

Hello, we are having some lambs of ours butchered at an abattoir, who also do the butchery. Over recent years we find that we often get fewer things back than we expect. They request a list of cuts and how you would like it butched. So we are trying to come up with a full list of how we would like it butched. I'm trying to make sure that as much meat comes back as possible, but also minimising excessive work for them. So it doesn't seem like a onerous list.

Please can people here look over this list and see if it is missing anything or anything doesn't seem optimal.

I'm trying to write UK terms, other countries may have different terms.

  • Legs: halved into fillet end and knuckle end (4 pieces)
  • Shoulders: halved into blade end and knuckle end (4 pieces), bone in
  • Chumps / rump: 2, left whole
  • Loins: cut into chops, 2.5cm thick
  • Best ends: cut into cutlets, untrimmed, fat on
  • Neck fillets: 2, returned whole
  • Middle neck: remainder after neck fillets, cut on the bone for stewing
  • Scrag end: sliced for stewing
  • Breasts: left whole, bone in
  • Offal: pluck, kidneys in suet, sweetbreads
  • Also return: caul fat, suet, bones for stock
  • All trim: minced, fat left in, packed in 500g bags

I have a older model Hobart meat grinder model 4632 And I am putting in a new toggle switch that goes to the contactor and I’m not sure which wires go where. Was wondering if anybody had or know where I could find a wiring schematic for that

I’m on my third pair of Red Wing HD Max or whatever. They’re sick, but they’re $300 and I get less than a year out of em.

Curious what y’all are choosing.

Beef Quality

where are you getting your primal ribeyes & strip loins? I’ve noticed the quality of our angus choice from swift has gone down significantly over the last few weeks and the price has gone up. today I had 2.5lbs that was unusable. last week I had one with the spinalis mostly separated. week before that there was a hole from I’m guessing a hanger that made 1/4 of the primal unusable. surely this isn’t that beef from Argentina, right?

I was cutting up a turkey I was given by a friend and this sat between the skin and thigh meat. It wasn’t attached to anything and kind of felt like someone had jammed a coin in there. It’s hard, but not bone hard. Also, would you eat the turkey? It seems a waste to throw the whole bird away

Half Cow - Finding 10+ blue pieces in every 2lb ground beef pack and more in other cuts

Thumbnail

Bought my 4th half cow from same rancher. The processor/ butcher he takes it to will mark maybe 2-3 pieces of meat (usually always somewhere on whole cow head I get like tongue) with blue dye mark ive only seen on the outside. In a 2lb ground beef package I am getting 10+ pieces of this blue substance that doesn’t look like the traditional blue dye markings because they are pieces within the meat. Idk if something went wrong at the grinder or what this is but don’t feel right eating so much of that shit and picking it out of all my ground. Anybody have an idea of what this could be?

Deep clean meat grinder.

Post image

I just inherited a pretty nice meat grinder from my late grandfather, and I am trying to get it cleaned up before use. All of the parts appear to be in good shape except for the grinding plates themselves (sorry, don’t know the proper name).

I checked with grandma, and she said the grinder was last used about 3 years ago. I don’t think it’s rust, but scrubbing alone isn’t getting it off. Any ideas?

Rib roast question

Post image

I asked for a prime rib roast with the ribs removed from a local butcher and got this. It’s currently dry brining in the fridge and is destined for the smoker. Is red circle typically what you get with a prime rib? Should I cut off blue and smoke them separately.
