Showcase (No-Recipe) First attempt swiss roll
Quite happy how it turned out, no cracks!! Made it with homemade rasberry jam. Recipe from Matt Adlard: no towel needed!

After many attempts, I finally feel like I’m getting there! Baking has taught me that patience really is key, and sometimes it takes a few tries before things turn out the way you imagined. There’s something so comforting about a warm, freshly baked cinnamon roll, especially on a cosy autumn day. 😛

Husband and I just moved to a new place! I'm from Brazil so I made a Brigadeiro cake to celebrate 😍

Friends coming for a birthday dinner. Just as I finished the cake, the power went out. Then she slid. Pivoted to trifle.

So this summer i got into baking. I usually bake cookies, muffins or brownies so this was something new for me. I was following a recipe for a 23 cm pan nut i only had a 30 cm one so tbats why its a bit flat but the taste is AMAZING. I am so proid of myself for making something like this and I will 100% be making this again.

Kneading was super hard since I had to do it by hand and I was so sure I added too much flour.. my braid is also erhm.. questionable. I just could not understand how to do it and ended up free styling it.
HOWEVER! It does taste amazing and I am so happy! My first enriched bread!
EDIT: Thanks for the lovely words everyone and the award kind stranger ❤️

I used Sally’s recipe here! Added vanilla bean paste and froze my crumble before adding it to the cakes. I also added a little cinnamon and vanilla bean paste to the glaze. https://sallysbakingaddiction.com/iced-pumpkin-coffee-cake/comment-page-13/#comments

Yes, I like strawberry flavor lol. I forgot to buy powdered sugar (and it was past midnight so I couldn’t go to the grocery store) so I spent a really long time crushing granulated sugar (and the freeze dried strawberries for the icing) with a mortar and pestle… it took hours. I gave up part way through so the icing ended up only slightly gritty. I don’t have the right food processors unfortunately, only mortar and pestle 😭

The only difference I made was the filling/dough
I made blueberry sugar and mixed it with butter, blueberry syrup, and a bit of flour for the filling instead of a traditional brown sugar/cinnamon. I also used the blueberry sugar instead of regular sugar for the dough🙏🏽
If you want the recipe, it’s on the previous cinnamon roll post😸

I love buying baking books and working through them one by one, like catching Pokémon, lol. Latest bake: Japanese pastry chef Yoko Tsuda’s "Mimosa" (orange kugelhopf cake). Honestly, it turned out amazing.

I made this baklava cheesecake for my partner's birthday. It's my last bake in the US before I head out to Paris for pastry school!

I wasent to sure about them as they were thin but they came out super soft and chewy, so good. I used buttercream for the middle
