Article A Hooch primer for N00Bs

A Hooch primer for N00Bs.

Version 1.0.

So with my limited hoochy knowledge I thought I'd put together a guide that helps noobs with making low-cost fermentations. With Prison Hooch we are mostly assuming you're just cheap/in an area where there's limited homebrew supply/up for a challenge rather than in actual prison, but for fun we'll keep a bit of plausibility that you could actually make this stuff in prison.

Note: I will not be liable for anyone underage that tries to make this hooch. If you're a kid reading this, please go away and keep your brain cells intact.

Part 1: Fermentation Vessel

To hooch, you'll need something to hooch in.

Homebrewer's way: Normally this is a sealed vessel (bucket or carboy) fitted with an airlock. If you're going to buy anything from a homebrew store, an airlock filled with water or sanitiser is the safest way to ensure your brew is sanitary and won't have any visiting creatures. For very vigorous fermentation, you can fit a blow-off tube (tube running from the fermentor into a smaller container with sanitiser).

Cheapskate way: As long as gases can escape, you'll be reasonably okay. You can fit a balloon or condom with a hole pierced in it to the top of your vessel. Make sure you put some rubber bands around to keep it tight. This is has slightly more upkeep than an airlock as you'll want to keep an eye on it in the beginning to ensure your fake-airlock doesn't over inflate. Also, don't reuse the condom and get prison babies. A bucket or carboy is great, but you can plausibly use any vessel that can withstand pressure ie. plastic jug, soda bottle, etc. DO NOT USE: glass that is not specifically for brewing. This is can be too weak for the amount of gases and could end explosively. You don't want a bomb.

Prisoner way: You can get by without an airlock, however you will need to 'burp' your container daily (or more than once a day at the start). This is easiest with a soda bottle as you can feel the pressure easily. Just loosen the lid just enough to let out the CO2, and re fasten. Or, do an open fermentation at the beginning when a lot of CO2 gas is escaping - usually there isn't great risk of airborne infection when fermentation is vigorous. Open ferment for 12-24 hours than proceed to 'burp' your container whenever pressure is feeling high. If you forget to do this and pressure gets too high it will explode. So if you're not in prison, just spend your $3 and invest in a fucking airlock.

Part 2: Sanitation

You'll need to clean all the equipment that comes in contact with the brew. Homebrewers buy cleaners like PBW and sanitiser such as StarSan. Make sure you do not mix acid and alkaline cleaning agents (ie. PBW and Starsan together) or you will make chlorine gas. However bleach will also work, a 5% solution is ideal. My preferred way is to fill a bucket with sanitiser and soak every piece of equipment before brewing. You can also boil metal equipment to sanitize it.

Part 3: Fermentables

As long as it has sugar, you can brew with it. Well mostly. Products with a lot of preservatives can have an odd effect on yeast viability, you can add a small amount of preserved goods to your brew but the largest part cannot be full of that stuff.

In this case we're going to just do sugar and fruit, even though there are lots of other options (malt, rice, sorghum, etc) these two are the most easily accessed. You need to anticipate the flavour of your fermentable without any sweetness to it, as all the sugar will be consumed by the yeast. This means some things (ie. apples) taste awesome fermented, and other things (ie. molasses) taste like absolute ass.

Table sugar and honey are safe bets for a high fermentation yield, though sugar by itself will taste pretty bad, it's the simplest way to make hooch. 1kg of sugar (100% fermentable) in 5 litres of solution (or 1.3 gallons for yankees) will give you around 7.5% alcohol.

Fruit can make your hooch taste a lot better, however. Sweet fruit that we mainly ferment have different types of acidity in their juices. You have Tartaric (found in grapes - wine), Malic (apples, pears etc) and Citric acid. Citrus fruits are the easiest to make juice from and will be a tempting option, however they impart a strong sour flavour when fermented. To make a more balanced brew you can use a base of Tartaric or Malic fruits, or honey (eg. mead). Honey is expensive as fuck so we'd recommend apple juice for hooch newbies. Most apple juices aren't preservative loaded and trustworthy to ferment. However, if you just want alcohol content, have at it any way you want.

Fruit has a much lower content of fermentable sugars and is only an estimate at best. Here's a fun table. Data was retrieved from Advanced Winemaking Basics: Sugars in Winemaking

Grams fermentable in each 100 grams of fruit (sorry USA, 1 oz is about 28 grams)
Apples, raw, unpeeled 13.3
Apple juice, unsweetened 10.9
Apricots, raw 9.3
Apricots, dried 38.9
Advocados, raw [0.9]

Pears, canned in juice 9.7
Pears, canned in light syrup 12.1
Pears, canned in heavy syrup 15.2
Pear juice, fresh [8.7]

Rhubarb, raw [0.9]
Strawberries, raw [5.7]
Strawberries, frozen, unsweetened [6.5]
Tangelos, raw [7.4]
Watermelon, raw [9.0]

So for example, if I were to make a Watermelon brew, I would need around 11kg of Watermelon if I was going to replace my original 7.5ABV sugar brew 1:1 with Watermelon, to meet the same fermentable sugar content. Experimentation is key and it's probably best to balance your cheaper fermentables with other additions.

Part 4: Yeast

The most obvious yeast you can get is bread yeast, or brewing yeast, from stores. Note if you get brewing yeast, you need to go to a homebrew store as the "Brewer's yeast" supplements sold by pharmacies are well and truly dead. The yeast consume sugar and excrete alcohol. They are your buddies and you need to be nice to them, which means keeping your brew at a safe temperature (10-28C at a stretch, 15-22C is ideal). Otherwise your workers will all be dead instead of getting to it. A normal pitch for dried yeast is around 20-40g, we won't be talking liquid yeast because this is hooch.

Second possible source of yeast is out in the wild. Yeast already exists on most fruit, so as long as it's not pasteurised (processed/heated up to kill bacteria), you can expect a wild fermentation to occur. This is more random than bought yeast but can yield good results. Most mead is made with a wild fermentation from honey. There's lots of places you can find yeast. You can't ferment using vegemite, marmite, or other yeast-based spreads, these are well and truly dead. However dead yeast (ie. boiled bakers' yeast) can be used as a nutrient to help the live yeast grow.

Part 5: GO

Now you have all the steps to make hooch. Wait 14 days for fermentation to complete, and you get alcohol. I could explain carbonation and stuff but I can't be bothered. Please use google if you'd like to learn about making your flat wine into a fizzy beverage.

Experiment I get why people use store-bought yeast now.

So recently, i've gotten into hooching, but i couldn't buy yeast (cuz why tf would anyone randomly ask for yeast) (also im broke.) so as a master plan, i got into baking and REALLY made sure my parents knew about my interest (btw before this, i have only made batches with the natural yeast in fruit skins) So when i eventually asked for dry active yeast, they didn't even question it. When i finally got my hands on actual yeast, as soon as they left my view, i started preparing my newest batch. I grabbed a gallon water jug, diced up an apple, added like 2 cups of sugar, and finally... added my yeast. I was SO excited. I checked in on it just a few hours later. And do you know what i saw? TONS of bubbles. I am ecstatic. Im never going back to natural yeast, (well unless i run out)

About 6 months ago I posted about making awful wine out of pine syrup and mint tea. I decided to freeze distill it to turn it into liquor in hopes of making it slightly more drinkable. Well after being aged and freeze distilled I can report the pine syrup just makes it irredeemable. Honestly I'd have slightly weird tasting rum otherwise but that ingredient just adds this awful note to the whole thing. 3/10

Can I cold crash something like ginger beer and store it for a long period

Or would it be at risk of exploding? I would be storing them in bottles. I want to make some to store in the fridge for a warm day

Nothing beats the sound of it bubbling. Best of all, my wife is supportive! I'm looking forward to trying them all and giving most of it away.

Does anyone have flavoring tips for the apple juice? Like spices to add, back sweetening, etc. it should be at 12% and pretty dry

Experiment Dorm room prison wine (stupidity warning)

I just recently discovered this silly art of making prison wine. Of course with some research, I decided to make a batch in my dorm room. So I bought a bunch of fruit and threw it in a trash bag with a bunch of sugar and yeast with no measurements like in prison. You guys might already be clenching your teeth at the thought of that. Do I need to worry about botulism or some other infection? I am starting to consider tossing this batch and going for something in a decent container with an actual airlock.

Recipe Is an extra week required?

i see a lot of people saying to wait an extra week after it's done fermenting. is that required and what does that do for it?

So I used mead lees instead of yeast

Post image
24 Upvotes

Today I wanted to use some not very good tasting persimmons on a family's field tree to ferment and distill. The thing is that my worksop is 30 mins away from my home and I forgot the yeast there. Since on the same day I bottled a mead that was made since half a year ago and was sitting on some lees left behind by the clarification (meaning it was already racked once), i decided to throw that in and hope for the best.

I'm not 100% sure of the safety of the fruit itself, because soft as it is, it was hard to clean properly enough, and I hoped for some quick yeast action to combat that. How likely is it to ferment on that conditions? Should I go back tomorrow and add some proper enology yeast?

Additional steps I took were freezing the fruit previously, and then throwing some 70ºC water to defrost it quicker. Then, of course, I added some regular temperature water and the mead lees when the mix temperature was around 28ºC

There is just something about hearing the bubbling sound of the airlock on a newly started batch. Gotta love it.

Welchs grape juice wine foamed out the airlock

Anyone know why it fermented so aggressively? I’ve used ec 1118 before but haven’t had something ferment as vigorously as this had to pour some out in the end it’s welchs grape juice with some chopped cherries and raisins

First Hooch Update

Started this about 12 days ago,

Tried it straight out of the bottle on day ten moved it to another bottle and cold crashed it.

I’ve mostly had cheap lidl red wine in my past, couldn’t say how much different my hooch tasted from the $4 winking owl wine, I’m sure there is but tbh I was only drinking it to feel tipsy sooo….

My hooch on first taste from the fermenting vessel was sour, and hazy, no big deal though, definitely DRY.

I decided to take it on trip with my buddy jack to the top of my fridge in some water bottles to see how that went…

The next days results from said trip gave the hooch a fortified wine sorta like a ruby port.

Im Portuguese so this pleased me very much I added some sugar to make it more palatable this worked for me.

All in all 12 days from bottle of juice, sugar and bread yeast and I got about a quart sized mason jar of a port like drink.

I’d say this experiment was a success!

Experiment Trying to make potato wine. How much sugar should i add to maximize the %alc?

Pretty much just the title, im using bread yeast and blended potatoes. Probably fermenting for max 2 weeks

hooching following yt vid

Post image
2 Upvotes

followed a vid by rainford brew lab on yt for his cheap lemon alcohol brew

4x2L soda bottles, each 2L bottle has:

  • 1tsp bread yeast
  • 300g sugar
  • 30ml lime concentrated lime juice (from supermarket baking section)

and im leaving it to ferment in my boiler room for about 10 days

will that be long enough? i left the lids on tight enough that the bottles are pressurised but loose enough that squeezing the bottle forces air out and that seemed to work fine last time but has anyone tried that and it gone wrong? (im pretty new to hooching this is my second batch ever)

thinking of freeze distilling this later, any classic rookie errors i might make?

thanks in advance for any advice guys

Should I be worried?

Sorry for not knowing any proper terms, I am very new to this and the only tutorial I watched was rewatching the Robbaz(youtuber) meat tutorial I saw as a kid.

So I attempted to make mead(and booze in general) for the first time recently. I started it more then a month ago. I made a batch of 2 liters using just water, honey, citrus(i later learned that citrus is not an ideal fruit to use whoops) and baking yeast from the store, which I fermented in a glass jug with a waterlock for 2-3 weeks.

I then siphoned it to a new clean jug with a waterlock that I let stay for about two weeks but not before adding a new load of honey water.

I siphoned it again to another new jug about a week after that because i grew worried because of what happened to an unrelated experimental batch of mine which isnt important rn.

Then after a week which was last week I finally bottled everything in 2 seperate bottles. But now this week I noticed that one bottle has developed bubbles, and a noticeable amount of that white yeasting remnant has appeared at the bottom(idk the proper term) I can also hear a fizzy noise coming from the top if i hold my ear too it. The other bottle(seen in last picture) doesnt have this.

So basically what I am asking is, will this bottle explode? If so can it be saved?

Edit: i followed u/analogue_drift 's advice and placed an improvised airlock(microwave foil and a rubber band) on the bottle so it doesnt explode

Do you drink the cloudy bottom hooch?

Been making wine hooch for 2 years.

EC-1118 > Sugar > Grape juice. It's ready in 10 days (for me).

No cold crashing, no nothing. I just drink it.

The cloudy stuff at the bottom. You drink it? I've never had any toilet issues.

have been brewing a cooper real ale for the last seven days, but upon checking my fermenter there is a considerable amount of opaque white film on the surface. it doesn't seem inherently mouldy or hairy. this would be about my 15th brew with this fermenter. I have only been using sodium percarbonate only to clean my fermenter and bottles.

underneath this seems fine, in your expert combined opinion, would you consider this a toss and chalk it up to a failed brew?
