Fat cat sugar cookies
Tried the Calico cat-patterned sugar cookies I’d seen on the internet. With Halloween coming up, my black cat’s birthday this month (not pictured), and visiting my “floofy” orange nephew, the timing to make these felt ideal.
They spread a little bit, but it actually made them more accurate to our cats 😹
Recipe:
1 1/2 cups unsalted butter, room temp (339g)
2 cups sugar (400g)
4 large eggs (200g)
1 teaspoon vanilla (5g)
1 teaspoon kosher salt (4g)
2 teaspoons baking powder (8g)
5 cups all-purpose flour (600g)
- Cream butter and sugar.
- Mix in eggs and vanilla slowly, scraping sides of bowl. Mixture should be smooth.
- Sift in and mix in dry ingredients.
- Chill dough overnight in flat discs (covered).
- Roll between parchment to a little thicker than 1/8-inch (3mm).
- Cut out shapes. Freeze while preheating oven.
- Bake at 400F (204C) for 6-8 minutes or until golden.
I used black cocoa and orange gel

Lemon Oreos or Mint Oreos ?
I’m in Discord talking to some friends & this debate came about. Personally I’m against mint and chocolate being together…I’m completely biased. Lemon Oreos are just another level, you definitely have a mature palette if indulging in fine sweets as such. Now this guy is claiming that mint Oreos are better just because they are over “hyped” and mint and chocolate means his palette is just as developed…he says it’s for sure better than lemon Oreos.

Dark Chocolate M&M Cookies
Made these yesterday! The dough is made with both black and regular cocoa powders, mini M&Ms, chopped dark chocolate, and semi-sweet chocolate mixed in and dipped in more mini M&Ms before baking.

Pumpkin seed cookie recipe
Ingredients
- 120g butter softened
- 75g light brown sugar
- 75g golden caster sugar
- 1 medium egg
- 1 tsp vanilla extract
- 130g plain flour
- 3 tbsp cocoa powder
- ½ tsp bicarbonate of soda
- 50g toasted pumpkin seeds
- 150g dark chocolate cut into chunks
- pinch of flaky sea salt
Method
- Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, cocoa powder, bicarb, chocolate, pumpkin seeds and ¼ tsp salt.
- Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Add a pinch of flaky sea salt before baking. Bake for 10-12 mins or until firm at the edges but still soft in the middle – they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

Cake box cookie mix in
I have been financially strapped for a while. Looking for fun Christmas gift ideas. A woman on social media did brown bag cake box cookies. Basically a surprise in each bag. Thought it would be fun to do a few of those. But don’t want to do simple recipes like chocolate cake mix and peanut butter chips. Rather have multiple mix ins to make unique. For example: chocolate cake mix with dehydrated mini marshmallows, mini teddy grahams and chocolate chips. Would love some fun suggestions!
