QUESTION Baking for experienced cooks
Baking, IMO, is soooo hard. I’m a fairly experience cook and I’m great at building flavor but the science and precision of baking is challenging for me.
I got bit by the baking bug and recently VERY successfully made carrot cake cupcakes and brown butter cream cheese frosting from Sally’s Baking Addiction.
What I liked about her site is that, not only did she provide recipes, but her recipes almost read like a cooking reference book, which I have a bunch of. She shared tips on measuring, how and when to try for variations, selecting ingredients etc.
Is there a baking for beginners book you guys like that is similar in this approach, but won’t be too elementary for someone that does know their way around a kitchen. The recipes don’t necessarily need to be overly simple, there just needs to be some context about why I’m doing things according to the recipe
I’m more interested in pastries and desserts versus pastas and breads at the moment but could be open if there’s a good book that gets you hip to the fundamentals.
